Our Beef is bought by ourselves at ST Boswells live  auction market our from our own farm in Uplawmoor.Once the beef has been recieved into our chills the HindQuartes are left to hang for 4-5 weeks amongst the racks of himalayan salt blocks  to remove moisture and prevent bacteria growth.

This process lets the beef mature and increase the flavour and tenderness of your steaks and roasts.
